Wraps with spinach, mozzarella, tomatoes and skyr pesto


  • 9 natural plain crêpes
  • Smoked Italian ham
  • 300 grams of spinach
  • 2 ripe tomatoes
  • 3 scoops of mozzarella
  • 1 garlic clove
  • 2 tablespoons toasted pine nuts
  • 60g grated parmesan cheese
  • 200g Skyr
  • Basil 2 full handfuls
  • Pepper and salt
  • 4 tablespoons Olive oil
  • Pepper and salt
  • skewers


  • Cut the Italian ham into thin strips and fry until crispy in a non-stick pan
  • Add the spinach and let it simmer with the lid on. Once the spinach is soft, let it simmer until the liquid has evaporated.
  • Season with pepper
  • Cut the tomatoes and mozzarella into pieces


  • Blend the garlic with the toasted arrow nuts, Parmesan cheese, olive oil and basil in the blender. Season with some pepper
  • Spoon the pesto through the skyr, season with some more pepper if desired.
  • Spoon the spinach and ham mixture onto the crêpe
  • Sprinkle the mozzarella and tomato on top
  • Fold up the crêpe as shown and serve with a skewer and a spoonful of Skyr pesto.
