Pancake cake with fruit mascarpone


  • 500 grams of sweet Beauvoorde crêpes
  • 500 grams of mascarpone
  • 4 tablespoons of icing sugar
  • 1 sachet vanilla sugar
  • 1 lemon
  • 3 kiwis
  • 2 trays of blueberries
  • 2 trays of raspberries


  • Take a nice plate or tray on which to present the cake beautifully.
  • Start by mixing the mascarpone with the icing sugar, vanilla sugar and two tablespoons of lemon juice.
  • Mix 1/3 of the mascarpone with 2 and a half kiwis
  • Mix 1/3 of the mascarpone with a cup and a half of raspberries
  • Mix 1/3 of the mascarpone with aner and a half container of blueberries.
  • Keep the rest of the fruit aside for decoration
  • Build the cake starting with a pancake and spread 3 tablespoons of the fruit mascarpone on it choose 1 colour per layer.
  • Put one pancake on top and spread the next layer of fruit mascarpone on the pancake.
  • Build further in this way and finish with a pancake. Spread the remaining fruit on top and sprinkle with icing sugar just before serving.
